摘要:合作猪生长缓慢,具有较高的大理石纹评分(3.78)和理想的肌内脂肪含量(3.93%);八眉猪肌内脂肪含量偏高(6.34%),大理石纹评分高达4.00。合作猪不饱和脂肪酸总量最高,达到51.31%,其次是八眉猪为47.78%,然后是A品系和LY,分别46.15%和45.29%。合作猪肌肉不饱和脂肪程度大,UFA/SFA(不饱和脂肪酸/饱和脂肪酸)最高,为1.16,因此,合作猪肌肉质量好,营养保健价值高。八眉猪的亚油酸含量最高,为7.31%,其次是合作猪,为6.25%,LY组最低,为4.30%.合作猪、八眉猪的肉质具有其独特的特点,可以成为优质的食用猪种。

Composition of Fat and Fatty Acid in the Muscle of Local Pigs of Gansu Province
Abstract:The marbling grade of Hezuo with low growth rate was 3.78, and intramuscular fat was ideal, which was 3.93%.; marbling grade of Bamei was higher (6.34%), and intramuscular fat was 4.00. There was the highest unsaturated fatty acid (47.78%) and UFA/SFA (1.16) in muscle Hezuo pigs, and there was highest linoleic acid (7.31%) in the muscle of Bamei. They all were our domestic pigs with special meat quality, which were exploited and used to meet consumer’s need.
