哈密瓜涂膜贮藏保鲜试验研究初报

摘要: 以哈密瓜为试材,采用壳聚糖溶液进行涂膜处理,分别贮存于3-5℃和室温条件下保鲜。通过对哈密瓜的呼吸强度、失重、硬度、总糖、Vc、果胶、乙醇等指标的对比分析,结果表明采用壳聚糖涂膜能减缓哈密瓜贮藏品质改变,结合低温技术可以达到理想的保鲜目的。

Preliminary Study on the Fresh-Keeping HaMi Melon Treated with Chitosan Coating
Abstract:Using chitosan coated HaMi melon, this paper studied the fresh-keeping experiments under the room temperature and 0~3℃. Its were analyzed some store qualities index, such as respiration rate, weight loss, hardness ,total saccharides, vitamin c, pectin, ethanol, and so on. The result showed that the store qualities can be slow down by treated with Chitosan Coating. Combining low-temperature, this method can obtain ideal effect.
