食品级木聚糖酶在面食制品改良中的应用试验

摘要:本文研究了一种国产食品级木聚糖酶在面食制品(馒头、面包)改良中的应用情况。试验结果表明,这种食品级木聚糖酶在单独添加或复配生产时,都能达到预期的改良效果,在国内市场上应用前景广阔。

Study on the Xylanase in Flour Food Use
Abstract:This paper studied on the condition of one xylanase in flour food, such as steamed bun or bread. The results showed that, this xylanase, added singly or complexedly, can improve the flour food as expected.
