近红外光谱技术在食品成分及质量控制方面的研究应用进展

摘要:摘要:近红外光谱技术是利用物质近红外吸收光谱信息,采用化学计量学方法分析处理实验数据,从而对样品进行定性和/或定量分析测定的一种快速、无损的新型检测技术,其突出特点是测定快速,分析过程不破坏样品,不用化学试剂,不污染环境,既可用于样品的定性分析,亦可用于有关成分的定量测定。该方法从最初的农产品分析逐步发展到食品、化工、医药和轻工等领域有关成分的分析检测,其量测信号数字化及分析过程绿色化是当今分析检测方法的一个新的发展方向。本文简要介绍了近红外光谱技术快速检测的基本原理,综述了国内外近红外光谱快速检测技术在食品成分及质量控制方面的研究应用进展,并展望了今后该领域的研究和应用前景。

The Progress in Research of Near Infrared Spectroscopic Technology for Rapid Determination in Food Component and Its Quality Controlling
Abstract:Abstract: Near infrared spectroscopy (NIRS) is a new, fast and nondestructive measurement technique based on the information of near-infrared absorption spectroscopy of tested constituents, in which the experimental data were analyzed and treated by chemometrics. It is characteristic due to its fast analyzing without destroying samples, polluting environment and any chemical reagent, which usually used in qualitative and/or quantitative analysis for samples. NIRS was used analyzing and determining constituents of farm products at first, and then extended to many fields such as chemistry industry, medical and pharmacology industry and dairy Industry, in which its digital information and green analyzing method stand for a new trend in the field of analysis and measurement technique. A brief summary about the basic principles of NIRS and an overview on the progress in research of NIRS for rapid determination in food component and its quality controlling were given in this paper, furthermore, the prospects of NIRS were also discussed.
