枸杞色素稳定性研究

摘要:本文探讨了光照、pH、金属离子、温度和氧化还原剂等对色素稳定性的影响。结果表明,在pH≤7的条件下,色素的稳定性较好,三小时后损失率在5%左右;色素损失率随温度升高而增加,当温度为90℃,两小时后,色素损失率达到45.7%;在自然光条件下,六天后,色素损失率达到32.1%;在相同条件下,共存金属离子Fe2+、Fe3+、Cu2+对色素稳定性影响较大,特别是Cu2+,48小时后,使色素损失率达到41.4%,而金属离子Na+、K+、Ca2+在浓度为0.05%条件下,48小时后,色素的损失率不到10%。

Studies on stability of Fructus Lycii Pigment
Abstract:To study the influence of fructus lycii pigment under metallic ion、temperature、oxidant and reducing agent. The results showed that this pigment is stable in the solution of pH≤7 and the loss rate about 0.5% after three hours and the pigment loss rate increase with the temperature increase, the loss rate achieved 45.7% after three hours at 90℃. This pigment is unstable in the sunlight and the loss rate achieved 32.1% after six days. Under the Fe2+、 Fe3+ and Cu2+ conditions are remarkably influenced the pigment stability. Especially the loss rate achieved 41.4% after forty eight hours by Cu2+. But Na+、K+ and Ca2+ have little effects on pigment stability, the loss rate is less than 10% after forty eight hours
