镇江香醋醋醅中产酸菌的分子鉴定

摘要:以镇江恒顺醋厂醋醅为实验样品,分离纯化得到5株产酸细菌,再以细菌通用引物P0和P6扩增其16S rDNA全长序列,经测序鉴定其分别属于Staphylococcus sp.、Paenibacillus sp.、Lactobacillus paracasei、Acetobacter pasteurianus和Bacillus ruris。

The Molecular Identification of Acid-producing Microbes in Zhenjiang Vinegar
Abstract:The solid culture of Zhenjiang vinegar was tested in this experiment. As to the acid-producing microbes, the GYC medium was used and 5 colonies were isolated randomly and purified which presented a clearing halo apparently. Subsequently we adopted the primers of P0 and P6 to amplify the whole region of 16S rDNA sequences of the isolated strains, subjected the sequences to GenBank and blasted, the results showed that the 5 strains were identified as: Staphylococcus sp., Bacillus ruris, Acetobacter pasteurianus, Lactobacillus paracasei and Paenibacillus sp., respectively.
