摘要:针对如何开发优质速溶锥栗粉奶粉进行了实验研究,尤其对锥栗在加工过程中的褐变现象的研究,最佳速溶粒度探讨,锥栗与奶粉的最佳比例搭配调试,对产品的防褐变和稳定性进行了重点分析.通过 L16 (4 4)正交试验表明复配的护色液能很好地防止栗仁片在加工过程中的褐变。确定出护色液的最佳配比为:柠檬酸 0.14%、EDTA-2Na 0.20%、NaC1 0.5%、Vc 0.03%。通过正交也确定了稳定剂的最佳复配方案:果胶0.5%、阿拉伯树胶0.02%、琼脂0.5%、糊精0.04%的实验效果很理想.以致得出了该产品的最佳工艺的生产条件和控制参数。
