摘要:新鲜猪血原料进行预处理后 ,采用中性蛋白酶对其进行水解,在单因素分析的基础上采用正交实验对酶解条件进行优化,确定了制备的最适酶解条件:底物浓度为10%,酶加量6000U/g,反应pH为7.5,反应温度为45oC,水解时间为8h。酶解的产物具有较高的营养价值和经济价值,因而具有很大的应用前景。

Enzymatic small peptides of pork blood by neutral protease
Abstract:The process for production small peptides from pork blood were examined by hydrolysis of pre-treated pork blood with neutral protease. The hydrolysis of pork blood using neutral protease was investigated. The orthogonal test was used to optimize the reaction conditions for enzymatic hydrolysis of pork blood based on a single factor test as follows reaction temperature 45oC,the amount of enzyme 6000U/g substrate concentration 10%,pH 7.5 and reaction time 8h.
