天然油脂中脂肪酸种类与甘三酯类型关系研究

摘要:文章对有机物同分异构现象进行了界定和详细划分;论述了各类生物油脂中脂肪酸组成的特点;对天然油脂中甘三酯构造异构体、构型异构体的构成规律进行研究,同时,就甘三酯构造异构体、构型异构体组分数目与甘三酯中含有的脂肪酸种类数目之间关系提出了统计学公式。统计公式表明:当油脂中含有n种不同脂肪酸时,甘三酯构造异构体可能总数为n(n-1);甘三酯对映异构体可能总数为n2(n-1),合n2(n-1)/2对外消旋体;当区分构造异构体、区分对映异构体、不区分构象异构体,即一对构造异构体的统计数为2,一对对映异构体的统计数为2 ,这时,油脂中的甘三酯可能组分数为n3种;当区分构造异构体、不区分对映异构体、不区分构象异构体,即一对构造异构体的统计数为2,一对对映异构体的统计数为1 ,这时,油脂中的甘三酯可能组分数为 n2(n+1)/2种;具有不同分子式的甘三酯可能总数为Cn1 +Cn2+ Cn3=n(n+1)(n+2)/6种。研究结果对了解天然油脂的甘三酯构成具有指导意义。

Studies on Relationship between Fatty Acids and Triglycerides in Natural Oils
Abstract:This paper states definition and further division of organic isomers, describes the characteristics of components of fatty acids in biological oils, and also analyzes the composing law of structural isomers and configurational isomers of triglycerides in natural oils. In addition, the statistical formula is suggested, which explains the relationship between the component number of triglycerides structural isomers and configurational isomers and the category of triglycerides fatty acids. The formula shows that when there are n different types of fatty acids in oils, the number of triglycerides structural isomers may be n(n-1); the total number of triglycerides enantiomers is probably n2(n-1), which means there may be n2(n-1)/2 pairs of raceme; In the conditions that structural isomers and enantiomers are identified, but conformational isomers are not identified, in other words, when the statistical number of a pair of structural isomers is 2 and the statistical number of a pair of enantiomers is also 2, the number of components of triglycerides is possibly n3; In the conditions that the structural isomers are identified, but enantiomers and conformational isomers are not identified, which means the statistical number of a pair of structural isomers is 2, and the statistical number of a pair of enantiomers is 1, the number of components of triglycerides in oils might be n2(n+1)/2; and also, the total number of triglycerides with different molecular formulas could be Cn1 +Cn2+ Cn3=n(n+1)(n+2)/6. The results of this study are significant to understand the composition of triglycerides in natural oils.
