紫甘薯营养成分分析及休闲食品开发

摘要:本文以紫甘薯粉为原料分析了紫甘薯粉的营养成分,结果表明:其主要营养成分有水分9.9g/100g、碳水化合物82.5g/100g,粗蛋白为4.768g/100g、粗脂肪0.2g/100g、维生素C 28.4mg/100g、纤维素2.7g/100g、无机盐0.68g/100g。并开发了紫甘薯馅饼休闲食品,确定了紫甘薯馅饼的配方,为紫甘薯粉75%和25%糯米粉。并探讨了加热方式和包装方式对紫甘薯速冻馅饼产品的影响。

Study on the Nutrients and Snack Food Exploitation of Purple Sweet Potatoes
Abstract:This paper studied the purple sweet potato’s snack foods, which were made by flour of purple sweet potatoes. Firstly, the nutrient compositions of purple sweet potatoes were analyzed. The result showed that its main nutritional ingredient is water 9.9g/100g, carbohydrate 82.5g/100g,protein 4.768g/100g,fat 0.2g/100g,vitamin C 28.4mg/100g,,cellulose 2.7g/100g and inorganic salt 0.68 g/100g.Secondly,this paper explored the purple sweet potato’s snack foods, and figured out the formula. The best formula is purple sweet potato flour 75% and sticky rice flour 25%. Then the influence to the purple sweet potato pie was discussed about ways of heating and packaging
