Bradford法测定牛奶蛋白含量不受三聚氰胺干扰

摘要:近年来三聚氰胺等含氮小分子化合物被发现非法添加在牛奶中,以提高用Kjeldahl法测定蛋白质时的表面含量。本文评估了在三聚氰胺等含氮小分子化合物存在的条件下,利用Bradford法测定牛奶中的蛋白总含量的可行性。结果表明,三聚氰胺、三聚氰酸、尿素和氯化铵均不干扰牛奶中的蛋白含量测定。Bradford法可以成为基层测定牛奶蛋白总含量的一种简便、快捷而又准确可靠的方法。

Bradford Determination of Total Milk Protein without Interference from Melamine
Abstract:Melamine and other nitrogen-containing compounds were recently found in cow milk products in China. These substances were used illegally as additives for increasing falsely total milk protein contents in the Kjeldahl protein assay. In this report, the Bradford method was used for the determination of total milk protein in the presence of melamine and other nitrogen-containing compounds. The results showed that the Bradford protein assay was not interfered by melamine, cyanuric acid, urea and ammonium chloride. This method can be utilized as a routine tool for the quantification of protein content in cow milk.
