淀粉溶剂和助溶剂的研究

摘要:本文以具有代表性的大米淀粉和不同直链淀粉含量的三种玉米淀粉为研究对象,分别以含不同配比量的水,乙醇,低分子量电解质LiBr和NaNO3的二甲亚砜(DMSO)为溶剂溶解淀粉,通过测定淀粉溶解指数,比较各种溶剂的溶解效果和助溶剂的增溶效果,以确定溶解淀粉的最佳溶剂。结果表明:向DMSO中添加少量的水并没有增加淀粉的溶解性,而乙醇、LiBr和NaNO3都是良好的助溶剂;其中,50mM NaNO3/DMSO是玉米淀粉的最佳溶剂,能达到100%的溶解度,其次是60μl乙醇/DMSO和50mM LiBr/DMSO;大米淀粉的溶解指数普遍比玉米淀粉低;助溶剂在DMSO中的增溶效果要比在90%DMSO/H2O中好;淀粉在N,N-二甲基酰胺(DMA)中的溶解效果较差,DMA不是理想的淀粉溶剂。

Study on Starch Solvent and Solubilizer
Abstract:Rice starch and three kinds of corn starches with different amylose content were chosen in this paper, DMSO with different proportion of water,ethanol,LiBr or NaNO3 was taken as the solvent to dissolve the starch,respectively.The results showed that water was not a good solubilizer,while ethanol, LiBr and NaNO3 all increased the starch solubility;50mM NaNO3/DMSO was the best solvent for corn starch which can achieve 100% solubility,the following was 60μl ethanol/DMSO and 50mM LiBr/DMSO;The rice starch solubility index was generally lower than corn starch;The effect of solubilizers on DMSO was better than on 90%DMSO/H2O;The starch solubility in DMA was poorer,so DMA was not an ideal starch solvent.
