摘要:目的:为了明确生淀粉糖链结构与糊化淀粉糖链纳米结构的差异;方法:作者用发明的光学单分子图像技术对淀粉糖链的纳米结构进行了研究;结果:生淀粉是由葡萄糖以α糖苷键连接糖链以α萄糖螺旋结构而不断缠结的纳米结构,糊化淀粉局部糖链变成了直链结构,而整个生物大分子变成无规则的直链缠绕结构;结论:非线性光学单分子图像技术是研究生物大分子纳米结构的的非常有效工具

Application of Nonlinear Optical Single-molecular Image Technique on Studying Nanostructure of Starch Chain
Abstract:We used the nonlinear optical single molecular image technique to study the nanostructure of starch molecular chains. Our experiment showed that the main structure of crude starch is α-helix structure of glucose and more α-helix structure tangles together. The structure of gelatinized starch is line structure tangled together. The experiment demostrated that nonlinear optical single molecular image technique is very useful tool in macromolecular nanostructure research.
