调味料的太赫兹时域光谱

摘要:实验利用太赫兹时域光谱(THz-TDS)技术对调味料样品进行检测。经过快速傅里叶变换(FFT),得出淀粉、白糖、红糖、苏打、食盐和味精样品在太赫兹波段的光谱数据。样品的吸收谱在0.2-2.0THz频段内各不相同并且呈现出特征吸收峰。样品的平均折射率在1.83-2.98之间,并且折射率谱在其吸收峰所对应的频率处出现了反常色散。对吸收系数的峰值位置以及折射率进行定标分析,THz-TDS技术可以用于不同种调味料的定性检测。实验数据为调味料的鉴别提供了依据,可以用于建立调味料的太赫兹波谱数据库。

Terahertz Time-domain Spectroscopy of Seasonings
Abstract:In this paper, the optical property and spectroscopy of seasonings were studied based on the terahertz time-domain spectroscopy (THz-TDS). By applying a numerical fast Fourier transform (FFT), the optical constants of starch, crystal sugar, brown sugar, soda, salt and monosodium glutamate have been calculated. The absorption spectra of samples in 0.2-2THz are different and show their characteristic absorption peaks. The refractive indices of samples appear anomalous dispersion. And it suggests that the resonance process is related with optical absorption, which also exhibits absorption peaks similar to those in the curve of absorption coefficient. Experiment demonstrates that THz-TDS technology can be used for the qualitative analysis of different kinds of seasonings according to their spectral features. And the results can be used to establish the fingerprint database of seasonings.
