Investigation on the distribution, formation and control of Ethyl Carbamate in alcoholic beverages
Abstract:Ethyl carbamate (EC), a known genotoxic compound, is possibly found in alcoholic beverages. In this paper, the distribution, formation and control of Ethyl Carbamate in alcoholic beverages were reviewed. This will provide a theory reference for reducing the EC content of alcoholic beverages.
