乙醇辅助水相法提取亚麻籽油及其品质分析

摘要:本试验比较了水相法、酶辅助水相法及乙醇辅助水相法提取亚麻籽油的工艺,探讨了不同粉碎方式及粒径对亚麻籽油提取率的影响,并对乙醇辅助水相法所得亚麻籽油及自制和市售压榨亚麻籽油的脂肪酸组成、罗维朋色泽、酸值、过氧化值、反式脂肪酸、维生素E及磷脂含量进行了测定和比较。实验结果表明,与水相法和酶辅助水相法相比,乙醇辅助水相法对亚麻籽油的提取率更高,可达92.73%,渣相的油含量可控制在4%左右。油脂的理化性质分析结果表明,乙醇辅助水相法所提油脂具有较好的品质,与冷榨油的品质相当,在维生素E含量方面优于冷榨油。

Ethanol-assisted aqueous extraction and quality analysis of flaxseed oil
Abstract:In this paper, the oil yields of different oil extraction methods including aqueous extraction (AE), enzyme-assisted (EAE) and ethanol-assisted aqueous extraction (EAAE) were compared and effect of particle size on the oil yield was studied. Fatty acid composition, tocopherol composition, acid value, peroxide value, color, phosphatide content and trans-fatty acids content of the oil obtained by EAAE were measured and compared with cold-pressed flaxseed oils made in our lab and sold in the supermarket. The results showed that particle size significantly influenced the oil yields for all the three oil extraction methods. The mean volume diameter of flaxseed powder pulverized by cylindrical roll crusher was about 65.77 μm which was half the size of that smashed by a high-speed grinder. Compared with AE and EAE, the oil yield of EAAE was significantly increased and reached to 92.73%, and the oil remained in the insoluble phase could be controlled at around 4%. What's more, the quality of oil obtained by EAAE was very high and was comparable with the quality of cold-pressed oil made in our lab, as indicated by analyses of index such as fatty acid composition, tocopherol and phosphatide content.
