地木耳藻蓝蛋白的抗氧化作用研究

摘要:本文对地木耳中的藻蓝蛋白进行了提取纯化,并对其抗氧化作用进行了初步研究。主要通过还原力、oOH自由基清除力、ABTS+o自由基清除力、抗油脂过氧化性等方法进行抗氧化作用研究。研究结果表明,地木耳藻蓝蛋白清除oOH自由基和抑制油脂过氧化效果较好,清除率和抑制率分别为91.4%和77.9%,对ABTS+o自由基清除效果较差,最高清除率仅有20.3%。

Study on antioxidant of phycocyanin from Nostoc commum Vauch.
Abstract:Phycocyanin from Nostoc commum Vauch. was extracted by cell disruption and salting in this study. After further purification, then contents of phycocyanin were determined and their antioxidant were researched through reducing power, oOH radical scavenging, ABTS+o radical scavenging and anti-lipid peroxidation for anti-oxidative effects. The results showed that the phycocyanin from Nostoc commum Vauch. could significantly decreased the oOH radicals and inhibited on lipid peroxidation, the rate had 91.4% and 77.9% respectively, but the phycocyanin could not significantly decreased the ABTS+o free radicals and the highest clearance rate had only 20.3%.
