小龙虾中重金属物质的检测分析

摘要:【目的】了解小龙虾中重金属含量,以及它们在生熟龙虾和龙虾头尾部是否存在差别。【方法】用电感耦合等离子体质谱(ICP-MS)检测小龙虾中重金属铅(Pb),镉(Cd),铬(Cr),砷(As),铜(Cu)含量的变化,用SPSS18.0分析生熟龙虾和龙虾头尾部位的重金属含量是否有差别。【结果】Cr和As在所有生龙虾和熟龙虾的头部和尾部都超标,Cd所有在生龙虾和熟龙虾的头部中发现超标,Pb和Cu仅在个别龙虾的头部或尾部发现超标。生龙虾和熟龙虾中的重金属含量的差别都没有统计学意义(P>0.05),Cd在小龙虾头部的含量高于尾部(P<0.05)。【结论】小龙虾中重金属含量超标问题依然很严重,在处理时要注意从购买方法,烹饪时长,食用方法等方面着手,减少龙虾中的重金属含量。

Analysis of heavy metal content in crayfish
Abstract:【Objective】To study the content and difference of heavy metals in raw and cooked crayfish, head and tail of crayfish and.【Methods】 The contents of heavy metals in crayfish were detected by Inductively coupled plasma mass spectrometry, the soft SPSS18.0 was used to analyze data.【Results】The contents of Cr and As in all detected crawfish were greatly higher than the standard content whether in raw or cooked crayfish, in head or tail of a crayfish. The content of Cd in the head of all detected crawfish was greatly higher than the standard content. The contents of Pb and Cu were higher in some detected crawfish. There was no significant statistical difference in the heavy metal content in the raw and cooked crayfish (P>0.05).The contents of Cd in the head of crawfish was higher than that in the tail (P<0.05). 【Conclusion】Considering the content of heavy metal crayfish is still very high, we need to pay attention to the way of buying, cooking and eating to reduce the content in crayfish.
