缓释微胶囊香味薄膜的制备及其性能评价的研究

摘要:研究香精微胶囊与塑料薄膜结合制备缓释香味薄膜。影响缓释微胶囊香味薄膜制备的因素主要有加热时间、加热温度、香精添加量三个主要因素,应用电子鼻机器嗅觉设备,通过研究缓释微胶囊香味薄膜的释放规律和香味的量化信息,得到了最佳条件下的加热温度、加热时间,并为香味包装薄膜的应用提供了理论依据。通过电子鼻设备对香味薄膜的研究,得到了可量化、对比的香味特征曲线,香味特征曲线代表着薄膜气味的特征信息,香味强度随着加热时间、加热温度、香精添加量的上升而增大,在加热温度为80℃、加热时间为1h的情况下达到香精添加量的能达到的极限香味强度。在缓释香味微胶囊薄膜制备的最优化实验条件下,得到了边际效益最大化的具有独特香气的包装产品。

Preparation and Evaluation of Sustained Release Microcapsule Fragrance Film
Abstract:Preparation of sustained-release fragrance films combining flavor microcapsules and plastic film was studied. The main factors influencing the preparation of the films of sustained-release microcapsules are the heating time, the heating temperature and the amount of flavor added. By using the electronic nose machine olfactory equipment, according to the releasing regularity and flavor curves of the fragrance films, the optimal heating temperature and heating time were obtained, which provided a theoretical basis for the application of the aroma packaging films. Through the research on the aroma film using the electronic nose device, quantitative and contrastive flavor curves were obtained. The aroma characteristic curves represented the characteristic information of the films, and the scent intensity increased with the increasing of heating time, heating temperature and amount of fragrance agent added. The maximum fragrance intensity was reached when the heating temperature was 80℃ and the heating time was 1 hour. Under the optimal experimental conditions for the preparation of sustained-release fragrance microcapsule films, an unique and aroma-rich packaging product with maximum marginal benefit was obtained.?????
