不同质构凝胶的感官与仪器测定相关性分析

摘要:为更准确地用质构仪测定方法代替感官评定表征凝胶体系的质构特征,本文选定9个质构差异较大的亲水胶体凝胶体系,采用Spectrum法进行较为全面的感官质构表征,同时选用两个常用的质构仪模式:TPA和断裂行为进行参数测定,通过感官与仪器测定结果的PLS分析,确定可以通过质构仪参数拟合感官属性,分析结果如下:硬度、润湿性可完全由质构仪TPA模式代替,而凝聚性、粘附性、顺滑度以及吞咽残余可通过断裂应变、弹性、硬度、凝聚性、胶黏性进行较好拟合,另外,易碎性、弹性等较为重要的质构特征属性则无法通过以上两个测定模式进行感官拟合。

The correlation analysis of variant gels\' texture by Texture analyzer and sensory evaluation
Abstract:To correlate the texture analysis of gels determined by sensory and machine, use 9 gel systems which have variance in texture and determined with the oral processing feeling by Spectrum sensory evaluation. And also measure the mechanical properties by TPA and rupture behavior modes in Texture Analysis and analyze the correlation between the results of two methodologies. The PLS analysis acknowledged which of the sensory attributes can be replaced by the machine. The results are as following: Firmness and moistness can be perfectly determined by the TPA mode, while the cohesiveness, adhesiveness, smoothness with particle residue after swallowing can be fitted by the TPA parameters such as rupture stress, springiness, firmness, cohesiveness and gumminess. However, the fracturability and springiness in sensory can\'t be well fitted.
