加工方式对葡萄籽油微量活性成分的影响

摘要:本文以多酚含量为指标,考察工艺条件对葡萄籽油的影响,结果显示亚临界二甲醚溶剂制得的葡萄籽油多酚含量高于丁烷和丙烷溶剂;超临界萃取法葡萄籽油的多酚含量随夹带剂乙醇含量的增高而增大;水酶法葡萄籽油的多酚含量普遍偏低。通过比较亚临界萃取法、超临界萃取法、溶剂法、冷榨法和热榨法5种不同加工方式对葡萄籽油的微量活性成分的影响,发现超临界流体结合乙醇萃取法葡萄籽油的多酚和总维生素E含量最高,分别为1269.60 mg GAE/kg和385.53 mg/kg;热榨葡萄籽油的总甾醇含量和角鲨烯含量最高,分别为343.29 mg/100 kg和19.75 mg/100 kg。最后以DPPH、ABTS自由基清除能力和抑制β-胡萝卜素漂白能力为指标,评价不同加工方式对葡萄籽油抗氧化活性的影响,结果发现超临界流体结合乙醇萃取法葡萄籽油的抗氧化活性最强,而冷榨葡萄籽油的抗氧化活性最弱。这一性质与葡萄籽油中的多酚和生育酚含量呈显著正相关。

Effects of Processing Methods on Minor Bioactive Compounds of Grape Seed Oils
Abstract:The polyphenol content was used as an index to examine the effect of process conditions on grape seed oil. The results showed that the polyphenol content of grape seed oil obtained subcritical dimethyl ether fluid than butane and propane; the supercritical extracted grape seed oil with ethanol etrainer,its polyphenol content increased with the increase of the ethanol content; the polyphenol content of aqueous enzymatic extracted grape seed oil was generally low.Then grape seed oil was extracted by using differet processing methods,such as subcritical extraction, supercritical extraction, solvent extraction, cold pressing and hot pressing,the effects of these processing methods on minor bioactive compunds were comparatively studied.The results showed that supercritical fluid with ethanol extracted grape seed oil was the highest in polyphenol and vitamin E content, which were 1269.60 mg GAE/kg and 385.53 mg/kg, respectively; the contents of total sterols and squalene were the highest in hot pressed grape seed oil, which were 343.29 mg/100 kg and 19.75 mg/100 kg, respectively.Finally, the DPPH, ABTS free radical scavenging ability and inhibition capacity of β-carotene bleaching were used as indicators to evaluate the effects on the antioxidant activities of grape seed oil by different processing methods. The results showed that the supercritical fluid extracted grape seed oil with ethanol had the strongest antioxidation activitise,while the cold pressed grape seed oil has the weakest antioxidant activities.These properties were significantly positively correlated with content of polyphenol and tocopherols in grape seed oil by different proceing methods.
