瓜尔豆胶及其复配溶液的流变特性研究

摘要:本文对瓜尔豆胶溶液及其与果胶复配溶液的流变特性进行了研究。主要研究了不同条件对瓜尔豆胶溶液黏度和粘弹性的影响,并从稳态流动、应变扫描、频率扫描以及动态温度扫描四个方面考察了复配溶液的协同增效作用。结果表明:瓜尔豆胶溶液黏度和粘弹性受质量分数、pH值和温度等条件的影响。GG/果胶复配溶液为非牛顿流体的假塑性流体,当复配比例为7:3及以上时,G‘与G“在应变50%~150%之间存在交点,瓜尔豆胶与果胶复配溶液具有一定协同增效作用。

Study on Rheological Properties of Guar Gum and Its Mixed Solutions
Abstract:In this paper, the rheological properties of guar gum solution and compound solution with pectin were studied. The main research was to study the effects of different conditions on the viscosity and viscoelasticity of guar gum solution, and the synergistic effects of the compound solution by measuring steady-state flow, strain scanning, frequency scanning, and dynamic temperature scanning. The results showed that the solution viscosity and viscoelasticity are influenced by the mass fraction, pH, and temperature conditions. The compound solution with pectin is a pseudoplastic fluid of non-Newtonian fluid, and when the compounding ratio is 7:3 or more, there is an intersection between G‘ and G“ in the strain of 50%~150%. The guar gum and pectin compound solution has certain synergistic effect.
