特丁基对苯二酚对抗坏血酸的再生作用在酒心巧克力中的应用

摘要:建立了可分离体系:将具有特丁基对苯二酚(TBHQ)的聚乙烯(PE)膜浸入到含有抗坏血酸(AA)或脱氢抗坏血酸(DHA)的水溶液中。通过追踪水相的抗氧化能力和AA含量的变化,观察TBHQ对AA的再生;提出了可能的反应机制。此外,研究发现含TBHQ的组别,AA的降解速率显着降低。PE膜表面积越大、PE膜片中TBHQ含量越高、反应时间越长、反应温度越高、DHA被再生至AA的效果越好,表明,尽管TBHQ难溶于AA水溶液,TBHQ对水溶液中的AA仍有再生效果。将TBHQ-AA应用于酒心巧克力中,发现在实际食品体系中TBHQ仍存在对AA的再生作用。

Application of ascorbic acid-tert-butyl hydroquinone in liqueur chocolate
Abstract:In this paperIn this study, a separable system was firstly established: a polyethylene (PE) film with tert-butyl hydroquinone (TBHQ) was immersed into an aqueous solution containing either ascorbic acid (AA) or dehydrogenated ascorbic acid (DHA). The regeneration of DHA to AA by TBHQ was observed by tracking the antioxidant capacity of aqueous phase and the changes of AA; possible reaction mechanism was proposed. Moreover, it observed a significantly decreased depletion rate of AA compApplication of ascorbic acid-tert-butyl hydroquinone in liqueur chocolateared with the control without adding TBHQ-PE film. Such an effect on the regeneration of DHA to AA was increased with a larger surface area of PE film, and a higher content of TBHQ in the PE film, a prolonged reaction time, and a higher reaction temperature. These results indicated the regenerative effect brought by TBHQ in the AA aqueous solution although TBHQ was insoluble in the AA aqueous solution. An application on liqueur chocolate with the addition of TBHQ into chocolate shell would significantly enhance the antioxidant capacity of AA in its filling.
