光催化技术对小麦中DON的脱除及对小麦品质的影响

摘要:本研究利用UCNP@TiO2复合材料对小麦中的呕吐毒素(DON)进行光催化降解,并通过对小麦基本理化指标的研究,评估在光催化氧化过程中对小麦品质的影响。结果表明,当光催化剂UCNPs@TiO2的用量为8 mg/mL,且料液比为1:2的条件下,90 min内,小麦中DON的脱除率可达到72.8%。对小麦营养品质的研究表明,光催化技术对小麦的淀粉、蛋白质以及脂肪酸值影响较小(P>0.05)。小麦粉的白度降低,黄度增加。同时,小麦的湿面筋含量及糊化特性在光催化过程中显著下降(P<0.05)。

Photocatalytic Technology For Removal of DON From Wheat and Its Effect on Wheat Quality
Abstract:In this study, UCNP@TiO2 composites were used to photodegradation of DON in wheat. The effects of photocatalytic oxidation on wheat quality were also evaluated by studying the basic physical and chemical indexes of wheat. The results showed that the removal rate of DON in wheat could reach 72.8% within 90 min when the dosage of photocatalyst UCNP@TiO2 was 8 mg/mL and the ratio of material to liquid was 1:2. Studies on nutritional quality of wheat showed that photocatalytic technology had little effect on starch, protein and fatty acid value of wheat (P>0.05). The whiteness of wheat flour decreased and the yellowness increased. Meanwhile, the wet gluten content and gelatinization characteristics of wheat decreased significantly during photocatalysis (P<0.05).
