醇水挤压制备方便全麦冲调粉的研究

摘要:为制备更加方便冲饮的全麦冲调粉产品,本文以脱壳小麦为原料,采用双螺杆挤压机对乙醇溶液浸泡后的脱壳小麦进行挤压处理,将挤出物干燥粉碎得到了可用任意水温冲泡的方便全麦冲调粉产品。分析探究了原料中的乙醇含量、挤压温度和螺杆转速对产品品质的影响。通过正交试验分析得出全麦冲调粉最佳挤压工艺条件为:原料中的乙醇含量9.35%、螺杆转速90r/min、挤压温度125℃,且3个因素对全麦冲调粉品质的影响大小依次为螺杆转速>挤压温度>原料中的乙醇含量。以此得到的全麦冲调粉具有良好的冷水成糊特性、分散快且结块率低。同时,该技术具有推广应用于制备其他谷物类方便冲调粉的潜力。

Study on preparation of instant whole wheat powder by extruding with alcohol and water
Abstract:In order to prepare cereal instant powder products that can be mixed with both cold and hot water, in this paper, wheat seeds were extruded by a twin-screw extruder after soaking in ethanol solution, and the extruders were dried and crushed to obtain convenient whole-wheat powder products that can be brewed at any water temperature.The specific method is as follows: The wheat seeds were soaked in ethanol solution with a certain concentration, the whole wheat was extruded by twin-screw extrusion process, and the whole wheat was dried and crushed to obtain the whole wheat powder which could be brewed in any water temperature. Ethanol content in raw material, extrusion temperature and screw speed were analyzed and studied. The results showed that the effects of three factors on the quality of whole wheat milling powder were screw speed > extrusion temperature > ethanol content in raw material, and the product had the characteristics of cold water milling. Through orthogonal test analysis, the optimum extrusion conditions of whole wheat powder blending were obtained as follows: 9.35% ethanol solution, 90 r/min screw speed, and 125 C extrusion temperature. The whole wheat flour prepared by this method has good pasting property in cold water, fast dispersion and low caking rate. At the same time, this technology has the potential to be widely applied to prepare other kinds of grain instant powder.
