大鲵开发利用研究进展

摘要:大鲵做为特色水产养殖品种之一,已在我国多地成功实现了产业化。随着子二代大鲵养殖规模、数量的扩张以及国家对大鲵等水生野生保护动物特许利用政策的实施,大鲵深加工及开发利用成为养殖业产业转型升级的瓶颈。本文通过检索国内外有关大鲵营养价值及活性成分开发利用领域的文献报道,从大鲵加工与开发利用角度进行整理,分别介绍了大鲵皮、皮肤分泌物、肉、油、骨骼和血液开发利用的研究概况,希望为新时期我国大鲵加工与综合利用水平提升提供参考。

Advances in Development and Utilization of Chinese giant salamander(Andrias davidianus)
Abstract:As one of the characteristic aquaculture species, giant salamander has been successfully industrialized in many places in China. With the expansion of the breeding scale and quantity of the second generation giant salamander and the implementation of the national policy on the franchise and utilization of aquatic wildlife such as giant salamander, the deep processing and development and utilization of giant salamander have become the bottleneck of the transformation and upgrading of the aquaculture industry. In this paper, by searching domestic and foreign literatures on the nutritional value and active ingredient development and utilization of giant salamander, the research progress of giant salamander skin, skin secretion, meat, oil, skeleton and blood development and utilization were introduced from the perspective of processing and utilization of giant salamander, hoping to provide reference for the improvement of processing and comprehensive utilization level of giant salamander in the new period.
