不同冻结方式对草鱼冻结特性的影响

摘要:本文以鼓风冻结为对照重点研究了浸渍冻结对草鱼冻结特性的影响。以冻结速率、冰晶形态、微观结构和理化指标作为评价指标,比较分析了不同冻结处理方式对草鱼冻结品质的影响,结果表明:不同冻结处理方式的草鱼通过最大冰晶体生成带的时间由大到小依次为:鼓风冻结>普通包装浸渍冻结>真空包装浸渍冻结>直接浸渍冻结,分别为23min,3 min,2.3 min和2 min。与鼓风冻结相比,经浸渍冻结后的草鱼形成的冰晶小,对肌纤维的损伤小,解冻流失率低。质构特性表明浸渍冻结的草鱼的硬度和弹性显著高于鼓风冻结(P < 0.05)。同时,真空包装浸渍冻结草鱼形成的冰晶略大于直接浸渍冷冻,有近乎相同的肌纤维形态,与直接浸渍冻结草鱼的质构特性无显著性差异。另外,真空包装浸渍冻结能避免直接浸渍冻结过程中产生的酒精味。因此,真空包装浸渍冻结比鼓风冻结、直接浸渍冻结和包装浸渍冻结更能保持冻结产品的品质。

Effect of Different Freezing Methods on Characteristics of Grass Carp
Abstract:Effects of immersion freezing on characteristics of grass carp were studied compared with air-blast freezing in this paper. The freezing rate, ice crystals, microstructure and some physicochemical indicators were evaluated to study effects of different freezing methods on quality of grass carp. The results showed that the time through the maximal crystallization zone for grass carp was as follows: air-blast freezing > common packaging immersion freezing > vacuum package-immersion freezing > direct immersion freezing, respectively 23min, 3min, 2.3min, and 2 min. Smaller ice crystals of grass carp were frozen by immersion freezing, causing less damage to muscle fiber and lower thawing loss compared to air-blast freezing. The texture characteristics showed that hardness and elasticity of grass carp frozen by immersion freezing was significantly higher than that of air-blast freezing(P < 0.05). At the same time, ice crystals of grass carp frozen by vacuum package-immersion freezing were slightly larger than those of direct immersion freezing, which had almost the same muscle fiber morphology. There was no significant difference in texture characteristics of grass carp between vacuum package-immersion freezing and direct immersion freezing. Meanwhile, vacuum package-immersion freezing could avoid the odor of alcohol created in direct immersion freezing. Therefore, vacuum package-immersion freezing could better maintain quality of frozen products than air-blast freezing, direct immersion freezing and package-immersion freezing.
