李 琳,男,汉族,1962年11月生,福建省南安人,中共党员,工学博士、教授、博士生导师,享受国务院“政府特殊津贴”专家。1982年、1985年及1988年在华南理工大学(原华南工学院)分别获得工学学士、硕士及博士学位,1988年开始在华南理工大学工作,其中,1996~1997年曾在香港大学植物学系工作。1990年晋升副教授、1995年晋升教授。现任华南理工大学副校长、淀粉与植物蛋白深加工教育部工程研究中心主任、华南理工大学制糖工程国家重点学科和食品科学广东省重点学科的学科带头人,兼任国务院学位委员会第五届食品科学与工程学科评议组成员、教育部科技委员会生命科学学部二部学部委员、国家自然科学基金委员会化学科学部专家评审组成员、国家发展与改革委员会生物工程重大专项专家评审组成员、中国农业工程学会农产品加工及贮藏工程分会第七届理事会副理事长、中国食品科学技术学会理事、中国海洋学会海洋生物工程副主任委员、江南大学食品科学与安全省部共建教育部重点实验室学术委员会委员、南昌大学“食品科学教育部重点实验室”第一、二届学术委员会委员、广东省人民政府第三届学位委员会委员、广东省科技奖励评审委员会委员、广州市科技奖励评审委员会委员、广东省生物物理学会副理事长、广东省制糖学会副理事长、广东省碳水化合物学会理事以及国内核心学术期刊《华南理工大学学报》、《食品与生物技术》、《食品科学》、《食品工业科技》、《化学工程》编委等学术职务。
长期致力于开展食品加工新技术、大宗农产品功能修饰以及食品安全等领域的科学技术研究。针对所研究领域存在的关键科学技术问题,瞄准当代的学术前沿,先后承担了近30项国家和省(部)级科技项目,包括国家发展与改革委员会食品加工重大专项、国家“十一五”科技支撑计划项目、国家“十五”科技攻关项目、国家自然科学基金重点项目等,在食品加工过程的物理场强化协同作用技术、天然产物活性组分分离纯化精制技术以及多糖类生物材料制备技术等领域的基础科学研究中取得一定的业绩,已申请31项国家专利,其中获得18项国家专利授权(其中,国家发明专利11项);发表的高水平学术论文被三大索引收录80多篇;并积极将具有重大应用价值的研究成果所构建的新技术和新装置在广东、广西和福建等国内食品行业中推广应用,创造了数亿元的巨大经济效益。相关科技成果曾获广东省科学技术一等奖(2005)、国家教委科技进步二等奖(1995)和三等奖(1992)。此外,个人还获得第八届“中国青年科技奖”(2004)、中国食品科学技术学会首届“中国食品科技杰出中青年奖”(2004)、国家教育部第四届“高校青年教师奖”(2003)、国家教育部霍英东教育基金会第五届高等院校青年教师奖(研究类)(1995)、第一届广东省“青年科技奖”(1998)、广东省第四届“丁颖科技奖”(1996)等荣誉称号。

the problems of prod. e quality, especilly the colour of white sagar. ace prominent in sugar factories in China because of the present low dliciency of clarification and decolorization in the sulphitation process. Similar problems also occur in factories with car bonatation. The colour of white sugar may be either from inlusions inside the rytals or n the sugar surface. Thus it is necessary to remove the impurities both in the inclusions and on the surface as much as possible. As a preventive measure, it is desirable to reduee colour in the juice and raw syrup. To improve charification. a new clarificant, G409, has been developed. It can be used both in mixed juice clacitication and in syrup flotation creacmcnt after elther suiphltation or caronatation. The improved syrup flotation with G409 and H3PO4 has been applied in a number of factories using sulphitation and carbonatation in Guangdong and Fujia Provinces. The results indicate that the quality of white sugar can be improved effectively and economically.

Certain physical properties of distilled water, tap water and sugar solution are affected when they are treated with a magnetic fileld. In particular, the evaporation rated of sugar solntion can be improved with a suitable magnetie field. The mechanism of this magnelic trcatment is discussed and the optimum magnetic conditions are proposed ofr improing the evaporation rated. It is concluded that magnetic teehnology could provide good prospects of energy saving in the sugar industry.

A novel method to enhance sucrose crystal growth was proposed and investigated. It was found that when sucrose solutions are irradiated by microwaves, the crystal growth rate is greater that in the traditional vacuum-evaporative crystallization. A kinetic model was established for the microwave-assisted crystal growth and X-ray diffraction analysis was also undertaken.

The influence of nine small organic molecules on the phosphorescence properties of cyclodextrin (CD)/1-naphthol/1,2- dibromoethane (DBE) and CD/2-naphthol/DBE ternary inclusion complexes are examined by means of room temperature phosphorescence (RTP) measurements. It was demonstrated that the rigidity of -CD/naphthol inclusion complex, RTP intensity and lifetime could be enhanced when different small organic molecules (less than 1% v/v) were added respectively; the analytical characters of two kinds of naphthols in host–guest stabilized-RTP were improved. The linear range of 1-naphthol become broad in the presence of n-propanol, methanol, ethanol or 2-propanol and its detection limitwas reduced from 4×10−6 to 7.5×10−8 mol l−1 in the presence of 0.6% (v/v) methanol. Likewise, for 2-naphthol, the detection limit was reduced from 2.0 × 10−6 to 2.8×10−7 mol l−1 and to 8.1 × 10−7 mol l−1 after 0.5% (v/v) glycol and 0.2% (v/v) 2-propanol being added, respectively.

The bioeffects of selenium on the growth of Spirulina platensis and the selenium distribution were investigated. S. platensis was batch cultured in Zarrouk medium containing increasing concentrations of sodium selenite. The biotransformation characteristic of selenium was analysed by the determination of the detailed selenium distribution forms. At 35 C, 315.2 lEm2 s1, sodium selenite concentrations below 400 mg l1 were found to stimulate algal growth, especially in the range of 0.5–40 mg l1. However, above 500 mg l1 sodium selenite was toxic to this alga with the toxicity being related to the sulfite level in the medium. S. platensis was found to resist higher selenite by reducing toxic Se(IV) to nonsoluble Se(0). Selenium was accumulated efficiently in S. platensis during cultivation with accumulated selenium increasing with selenite concentration in the medium. It was demonstrated that inorganic selenite could be transformed into organic forms through binding with protein, lipids and polysaccharides and other cell components. The organic selenium accounted for 85.1% of the total accumulated selenium and was comprised of 25.2% water-soluble protein-bound, 10.6% lipids-bound and 2.1% polysaccharides-bound selenium. Among the organic fractions lipid possessed the strongest ability to accumulate Se (6.47 mg kg1). The 14.9% inorganic selenium in S. platensis was composed of Se(IV) (13.7%) and Se(VI) (1.2%).

The influence of different denaturants on the phosphorescence spectrum and lifetime decay of Escherichia coli alkaline phosphatase (AP) was investigated. Phosphorescence intensity and lifetime of tryptophan residue (Trp-109) decrease upon addition of guanidine hydrochloride, ethylene diamine tetraacetic acid, and urea or decreasing acidity. The experiments show that AP undergoes different pathways with different denaturants and that the activation energy data, DS8" and DH8" further confirm that there is a stable intermediate state between the folded and unfolded AP states in solution.

Twenty-three strains of Salmonella spp. isolated from healthy humans in Guangdong, China, were examined for their susceptibility to ten common antibiotics and the presence of antibiotic resistance integrons. All the strains were resistant to at least one antibiotic, and 4 strains were positive for the intI1 gene. Polymerase chain reaction using in-F and in-B primers showed the existence of amplicons of 1,009 bp in two, 1,664 bp in one, and 1,009 bp and 1,664 bp in one of the intI1-positive isolates, respectively. Sequence analysis revealed that the 1,009-bp amplicon harbored gene cassette aadA2, conferring resistance to spectinomycin, and the 1,664-bp amplicon harbored genes aadA5 and dfr17, conferring resistance to spectinomycin, streptomycin and trimethoprim. Meanwhile the experiments of plasmid conjugation and Southern hybridization with intI1 as the DNA probe indicated that all the integrons found in these strains were chromosomal. Because the strains carrying class 1 integrons were isolated from healthy humans, it suggests the need for all-round surveillance of the antibiotic resistance of pathogens.

Dextran is a bacterial polysaccharide which can be produced from sucrose and usually used for clinical treatment as one kind of practical polysaceharide drags. The molecular weight distribution of dextran is an important index for its application. However, it is hardly to control strictly by the traditional separating method with ethanol. Taking separation and purification of medicinal dextran as the object of this study, a new separation technology, coupling electro-ultra-filtration with solvadng-out-crystagization (EUF-SOC) was developed and applied successfully, It was found that the permeate flux of optimized EUF-SOC technology is several times of normal ultra-filtration (UF) or enhanced ultrafiltration with an electric field (EUF), and its quality is higher than that of traditional process. The selective crystallization of dextran can be realized and homogeneous dextran crystals can be got in the process of membrane filtration by using EUF-SOC technology. The results showed that the mass transfer coefficient (k) of EUF-SOC process is about 4 times of UF and 2 times of EUF.

Zirconia nanopowders were prepared in the ultrasonic field by the sol-gel method and the sonochemical effect on the structure of zirconium hydroxide and the zirconia nanopowder properties were systematically investigated in this work. Ultrasound was introduced into the different stages of the synthesis of zirconia nanopowders in sol-gel reaction system, and zirconium hydroxides and the zirconia nanopowders with different properties were obtained. The results indicated that ultrasonic cavitation could not only disaggregate the agglomerates of zirconia colloidal particles but also reduce the amount of coordinated H2O, free H2O and free hydroxyl groups of the zirconium hydroxide colloidal particles, thus effectively preventing the formation of hard agglomerates in zirconia powders. Moreover, the effects of different ultrasonic output powers and treatment cycles on the structure and properties of ZrO2 nanopowders were studied by TEM, XRD and SAXS. Zirconia nanopowders with an extremely small crystallite size (10.3 nm) and a narrow size distribution were yielded with 520 W ultrasound for 6 treatment cycles on the formation period and 600 W ultrasound for 2 treatment cycles on the washing period. It is concluded that the ultrasonic field is a potential method for nanopowder preparation.
