酒糟基活性炭的制备及其对低酒精度酒中风味化合物的吸附

摘要:酒糟是白酒酿造过程中最大的废弃物。该研究将酒糟制备成活性炭,提高酒糟的附加值。采用全自动比表面积分析仪(Micromeritics 3Flex)测定77 K下的N2吸附-脱附等温线对其结构特性进行分析,比较了制备方法对吸附性能的影响,并将其在低度白酒中应用,采用固相微萃取结合GC-MS分析风味化合物的去除率。研究表明干热法制备活性炭优于水热法,最佳制备方式得到的活性炭的比表面积、微孔体积分别为1317 m2/g、0.49 cm3/g。在低酒精度酒中活性炭对萘和酯类物质吸附明显,尤其是对高级脂肪酸酯的吸附,去除率达到70%,除浊效果优异。该研究对酒糟基活性炭的制备及白酒中实现某类化合物特异性吸附具有重要指导意义。

Preparation of distilled spent grains- activated carbon and its adsorption of flavour compounds in low-alcohol liquor
Abstract:Distilled spent grains (DSG) is a major by-product of liquor (baijiu)-making production. This study prepared DSG into activated carbon to increase its added value. Textural properties of AC samples were determined from N2 adsorption-desorption isotherms at 77 K by using a Micromeritics 3Flex analyzer. The effects of activated carbon preparation methods on adsorption performance were compared and applied to low alcohol liquor, and the removal of flavour compounds was analysed using solid phase microextraction combined with GC-MS. It was shown thatPreparation of distilled spent grains- activated carbon and its adsorption of flavour compounds in low-alcohol liquor the preparation of activated carbon by dry heat method was superior to hydrothermal reaction, and the specific surface area and micropore volume of AC prepared under optimum conditions are 1317 m2/g and 0.49 cm3/g, respectively. In low-alcohol liquor, activated carbon has obvious adsorption of naphthalene and ester substances, especially the adsorption of advanced fatty acid esters. The removal rate reaches 70%, and the turbidity removal effect is excellent. It has important guiding significance for the preparation of DSG-based activated carbon and the specific adsorption of compounds in Baijiu.
