摘要:为保证水果罐头食品从供应环节到销售阶段的安全性,基于风险思维角度出发,本文对水果罐头从产品设计伊始到加生产加工再到储运销售各个环节进行潜在危害分析,并制定生产过程中的HACCP计划表,对后期的储运销售也提出相关预防措施,逐步实现从产品监管到食品产业链全过程的预防性监管,以确保最大程度的保证水果罐头食品安全。

Risk Analysis of Fruit Canned Food Safety Based on Risk Thinking
Abstract:To ensure the safety of canned food from the supply link to the sales stage, based on the risk thinking perspective, this paper analyzes the potential hazard of canned fruit from the beginning of product design to processing and processing to storage and transportation, and formulates the production process. The HACCP plan form also proposes relevant preventive measures for the later storage and transportation sales, and gradually implements preventive supervision from product supervision to the whole process of the food industry chain to ensure the maximum safety of canned furit.
